Make the Soups Base
In a large pot, heat a oil over medium heat. Add the carrots, celery, and garlic, and cook for about 5 minutes until the veggies are soft. Sprinkle in the 4 tablespoons of flour and stir to coat the veggies. Let it cook for 1-2 minutes to get rid of the raw flour taste. Slowly whisk in the evaporated milk and chicken broth, stirring constantly to avoid any lumps. Add the shredded chicken, dried thyme, and salt and pepper to taste. Bring it all to a simmer and let the flavors come together.
